Welcome back, lovely foodies! ✨✨✨ Today we are making delicious and surprisingly easy German-Style Soft Pretzels, and it took me a little while before getting this one as perfect as it is, so I hope you will be giving it a chance. There are a few security considerations to keep in mind when making pretzels, since we are using good-grade lye to make them nice and tanned and crunchy. If you follow the instructions shown in the video, all will be okay, and you will soon be a master at making soft pretzels! Thank you so much for taking the time to watch my videos and try my recipe. Happy baking! ✨ --------------------------------------------------------------------------------- 「 ✦ Chapters ✦ 」 Jingle 0:00 Introduction 0:19 Security Notice: 1:09 Recipe 2:19 --------------------------------------------------------------------------------- ➡️ INGREDIENTS ----------------------------- makes 5 pretzels - 15g of barley malt syrup - 165ml of boiling water - 5g of yeast - 300g of bread flour* - A generous pinch of salt - 40g of room temperature butter * If you do not have bread flour on hand, you can make your own by mixing 300g of all-purpose flour with 15g of vital wheat gluten. After mixing thoroughly, remove 15g of the flour mix. * --------------------------------------------------------------------------------- ➡️ DIRECTIONS ----------------------------- 1— In the bowl of a stand mixer, dissolve the barley malt syrup in the boiling water and allow the water to lower its temperature to lukewarm before adding the yeast. 2— Add the rest of the ingredients (flour + generous pinch of salt) and start the stand mixer on low speed (speed 1) to combine the dough. Scrap the sides of the bowl as needed to help the process. 3— Once the dough is formed (about 5 minutes), gradually add the room-temperature butter, in small pieces. 4— Continue kneading the dough on low speed (speed 2) until all the butter has been incorporated and it is elastic and silky. This step takes about 30 minutes. 5— Rest the dough in the stand mixer, covered, for 20 minutes. 6— Drop the dough on the counter, deflate and split it into five equal pieces of 100g to 102g, and roll each into a tight ball without using any additional flour. 7— Roughly shape the balls into small cylinders and let them rest covered with parchment paper and a warm, damp rag for 20 minutes. 8— Shape the Pretzels: Flatten the cylinder and remove all the air, shaping it as if you’re making a baguette. Create a long coil, leaving the center thicker and the end thinner. Fold the two ends upward, twist them, then bring them down to form the classic pretzel shape shown in the video. 9— Oil a silpat (or parchment paper-lined baking sheet) and place the shaped pretzels on it. 10— Once all the pretzels are shaped, cover them with parchment paper and a damp rag for a resting period of 20 minutes. Then place them in the fridge, uncovered, for at least four hours or overnight. We want the pretzel to form a crust. 11— The next day, before mixing your lye solution, WEAR GLOVES AND PREPARE YOUR WORK SURFACE and make a 4% food-grade lye (1L of water - 40g of lye or sodium carbonate). 500ml - 20 \ 250ml - 10 11— Submerge the pretzels in the solution for up to 10 seconds (5 seconds on each side), then place them on a cooling rack to allow the excess liquid to drip off. The goal is to keep the butter cold at all times, so don't hesitate to return it to the fridge or freezer if you notice it melting. *3.* In another big mixing bowl, mix the remaining dry ingredients from bowl 1. Then add the cold butter and mix. *4.* In another bowl, whisk the ingredients of bowl 2 before adding them to bowl 1. *5.* Gently fold in the wet ingredients into the dry without overworking the dough to avoid too much gluten development. Enjoy 😊✨ --------------------------------------------------------------------------------- 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 「 ✦ *Chapters* ✦ 」 - Music 0:00 - Introduction 0:19 - Recipe 1:11 --------------------------------------------------------------------------------- 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🤍 🍽️ *RECIPE* ----------------------------- ➡️ *INGREDIENTS* ----------------------------- - 5g of active dried yeast - 50g of salted butter (melted but not hot) - 100ml of boiling water - 8g of cane sugar - 120ml of cold milk (full-fat) - 1 large egg at room temperature - 340g of all-purpose flour ----------------------------- ➡️ *DIRECTIONS* ----------------------------- *1.* If your butter is cold from the fridge, I suggest you melt it in the boiling water before adding the sugar to dissolve, and then the cold milk. *2.* Sprinkle the yeast on top and allow it to rest for 5-10 minutes. *3.* Whisk the egg in. *4.* Add the flour and mix with a spatula and your hands, but be careful; the dough will be very wet at this point, and the goal here is to knead as much as you can so the flour seems all hydrated, but you don't need to overdo it. This should take 3-4 minutes. *5.* Allow the dough to rest for 10 minutes. Allow it to rest for a few minutes (2-3 minutes) to give the surface a smoother texture. By then, some of the gluten will have relaxed and become easier to knead. *6.* Rest the dough in a covered, greased bowl for 4 hours. *7.* Flatten the dough on a lightly floured surface and cut the English muffins using a cookie cutter, a cup, a wine glass, or anything else you have on hand. *8.* Sprinkle cornmeal at the bottom of a baking sheet and place the sliced English muffins on top. Sprinkle more cornmeal on top of them. Allow them to rest, covered, for 1 hour. *9.* Heat a griddle (a non-stick pan works too) and grill on both sides (no fat needed) until golden brown. Drop the previously greased and floured pan, folded side down. Rest for another hour or more, if needed, until it has doubled in size. *5.* Preheat the oven to 400°F (around 200°C). Bake your loaf for 45 minutes or until it has a nice, even browning all around. Because everything is better homemade, obviously, it's time to make your own teriyaki sauce and ditch the store-bought version, because why not? Right? This recipe is incredibly quick and easy to make, and it stores well in the freezer in small ice cube trays or in the refrigerator for a few weeks, so why would you not take the time and whip this up? Then, remove the solids and squeeze them well to extract as much tamarind juice as possible. *2.* Add the tamarind juice along with all the other teriyaki sauce ingredients into a small saucepan and heat the sauce slowly until it simmers. *3.* Drop the mixed slurry and continue cooking on a low simmer until the sauce thickens. Scallion pancakes are one of my favourite guilty pleasures—crispy, flaky, savoury goodness. Enjoy! 😍✨✨ --------------------------------------------------------------------------------- 「 ✦ *Chapters* ✦ 」 - Music 0:00 - Introduction 0:19 - Recipe 1:11 --------------------------------------------------------------------------------- 🍽️ *RECIPE* ----------------------------- ➡️ *INGREDIENTS* ----------------------------- _For the pancake dough_ - 175g of all-purpose flour - 100ml of hot water - 5g of fine sea salt _For the slurry_ - 17ml of olive oil - 15g of unsalted butter, melted - 12g of all-purpose flour - pinch of salt _Extras_ - Extra flour to roll the dough - Sesame oil or other oil you prefer to grill your pancake in. _Dipping sauce_ - 10ml of rice vinegar - 10ml of soy sauce - hot sauce, spicy peppers, etc (optional) ----------------------------- ➡️ *DIRECTIONS* ----------------------------- *1.* Mix all the ingredients for the pancake dough and knead the ball of dough for a minimum of 5 to 10 minutes until it becomes incredibly soft and silky and not at all sticky to the touch. Allow it to rest on the counter (covered) or in a closed plastic container for 15 minutes. *2.* Once rested, split the ball of dough into four equal pieces and roll them back to a ball shape on the counter. Cover and return to rest for an additional 5-6 minutes. *3.* During that time, mix the ingredients for the slurry together and reserve. *4.* Chop the green onion. Chop as many as you think you will need, keeping the green and white parts together. The quantity of onion is decided by how much filling you would like to have in your pancake. *5.* Flatten the first dough ball into a rectangle on a very lightly floured surface, stretching the dough as thin as possible without it breaking on you. Then, apply the slurry and think as tightly as possible, as shown in the video. *6.* Flatten the rolled dough with the palm of your hand and push the air out as much as possible. Then, roll it from the side with the most filling to the side with the least filling. At the end, tuck the piece of dough without filling under what should look like a cinnamon bun. *7.* Cover the scallion-filled bun while you repeat this process with the other dough balls. Once done, allow them to rest for another 15 minutes. *8.* Heat a nonstick pan on medium/high. Wait until it becomes extremely hot to fry your pancakes. Flatten the head of each bun to the desired thickness on a lightly floured surface, grill in the pan with a bit of sesame oil, and cover your pancake during the entire process. Add the egg and the remaining ingredients, and whisk well until smooth. *4.* Mix bowl two into bowl one until all are combined. *5.* Baking sheet (double pan + silpat): shape a log with the batter. *6.* Bake for 20 minutes. *7.* Let the log cool for 10-15 minutes and gently reshape it with your hands while it’s warm. Then, slice it into individual portions and place them on their sides on the baking sheet. *8.* Bake for 15 minutes, turn them around, and add an extra 15 minutes. *9.* Cool down entirely before enjoying, and voilà! ----------------------------- ➡️ *NOTES ON ALMOND FLOUR:* Use super fine, blanched almond flour. _Almond meal vs almond flour_ is that almond meal is raw almonds ground into powder (can be semi-coarse) with the skin on. They will be yellowish-brown in colour. _Almond flour:_ is finely powdered blanched raw almonds. Searching for your next best maple syrup recipe? This decadent French Canadian treat was invented in Montreal during the Great Depression of 1929, and it may become your new favourite maple-all-over-and-all-the-time recipe. Pudding Chômeur translate to (roughly) _poor man's pudding_ or _unemployed pudding_ 😂. Overall, it means that it was a budget-friendly recipe for people with limited resources who wanted to make their family happy during hard times. In all honesty, only for the amount of sugar in there, pudding chômeur may not be a recipe you'll whip up every weekend, but when you do, it will be an important moment. Allow the mixture to simmer for a few minutes (2 mins) to ensure that all the sugar is dissolved. *6.* Pour the sauce equally over the cake batter, but use your spatula to stop the stream of sauce to make sure it doesn't create big holes in the batter. *7.* Place your oven dish on a baking sheet and place it in the oven for 45 minutes. *8.* Allow the cake to cool down fully before digging in. Have you ever wondered what to do in Switzerland besides hiking mountains and walking around in nature? Check out their yearly wine festival in the French canton of Valais! Over 200 wineries open their doors yearly, and anyone can have a tasting for 40CHF a day. Switzerland exports less than 2% of its wines, and the Swiss vineyards cover 14,696 hectares and have more than 2,500 winemakers. You can only imagine how much there is to discover, and let me tell you, there is!!! I had a blast spending the day surrounded by happy people, listening to music, eating decadent food, and walking around this idyllic and mystical-looking countryside. Pâte à Choux | Choux pastry dough | Recipe
Hello, Welcome back to my channel. Today we are starting a new recipe focussed series, and making choux pastry is the perfect recipe to start this new series on the channel. Pâte à choux (or choux pastry) is very versatile, and this recipe can open a world of delicious possibilities for you! Once you master it, not only the classic chouquettes, profiteroles, choux aux craquelins, and cheese gougères are opening for you. So many more recipes leave so much space for your imagination. --------------------------------------------------- 🥚 RECIPE (main) - Pâte à choux 120ml of water (or milk) 40g of butter (salted or unsalted is ok, depending on what you're making) 120g of all-purpose flour 2 large eggs (room temperature) 🥚 RECIPE VARIATIONS 🌸 - Choux aux craquelins (craquelin recipe) This can be done in advance... either just before making one batch of the pâte à choux dough or 1-2 days in advance. Keep in the fridge until you're ready. 60g of soft butter (unsalted, room temp) 70g of brown sugar (light or dark will work) 70g of all-purpose flour ...mix together all the ingredients and flatten the dough to a 0.5cm thin sheet (I strongly recommend flattening the craquelin dough between two parchment paper sheets) and leave it in the fridge until it gets harder. Once it's hardened, get it out of the fridge and, with a round cookie cutter, cut a bunch of disks. When you are assembling your choux aux craquelins, make sure the craquelin disk is a little bit bigger than your pipped choux pastry dough (as shown in the video) 🌸 - Cheese gougères Add about 100g of finely grated cheese per batch of choux pastry dough. Gruyère, Parmesan or Pecorino are the best. No soft cheese. Let your imagination run wild. 🌸 - Chouquettes No modification to the original recipe, but topped (before baking) with Pearl sugar which is compressed sugar crystals that won't melt away once baked. You can usually find pearl sugar in specialty baking supply stores. 🌸 - Chocolate eclairs No modification to the original recipe piped in a log shape.
